Balzac's Coffee Roasters. Deeply rooted in the traditional European artistry and hand-crafted coffee roasting, Balzac's micro-roasts the finest selection of high-grown Arabica beans in single 35 kilogram batches. We employ no automated or continuous feed technology. Each varietal is carefully roasted to a degree that will preserve and enhance its inherent and unique qualities. Our roasting style reflects the insight and philosophy of the Slow Food Movement, which we believe has a strongly discernible effect on the resulting taste and quality of our coffees.

Most small-scale farmers in Sumatra, use the wet hulled process (Giling Basah in Indonesian). The mature coffee fruit, referred to as the coffee cherry, is harvested and farmers remove the outer skin using locally built pulping machines. The coffee beans are stored for up to a day during which a natural fermentation breaks down the sticky residue of the skin. Afterwards the coffee beans, protected by a parchment hull, are washed off before being let out to dry.

Contrary to other traditional drying methods, where the parchment coffee is dried until it reaches about 12% moisture content, the beans in the wet hulled process are hulled when they reach between 30 and 35% moisture content; still semi-wet. The green coffee beans are then further dried to reach the exportable 12% moisture content. This operation gives the beans a unique bluish-green appearance and reduces the acidity and increase the body.

    Whole Bean Grind Chart

    If you are purchasing a bag of whole bean coffee on our website, you can select your grind method of choice (at no extra charge!) from the dropdown and we will grind and ship it to you. We grind the beans freshly for you at our warehouse in ECS Coffee Burlington right before your order is shipped, and reseal the package to maintain optimal freshness in transit.

    If you are visiting us in store, you can also request for your beans to be ground in store before you take them home.

    We use a commercial BUNN Burr Grinder to grind the beans.

    Please note: Freshly ground coffee is non-refundable and not returnable. To ensure that you receive a ground coffee that is consistent with your brew method of choice, refer to our Grind Chart below! 

    FINE

    For use with espresso machines. Fine coffee grinds will have the size and feel of sand.

    MEDIUM FINE

    Choose a medium fine grind if you are brewing with a Moka Pot, stovetop espresso brewers or an Aeropress.

    MEDIUM

    Cone Filter - We use two medium settings depending on your brewer. The Cone Filter medium setting is a bit finer, and is suitable for pour-over drip brewers (cone style) such as Hario, Melitta, Clever. It is also used for cone style automatic brewers.

    Flat Bottom Filter - This setting is suitable for coffee machines with a flat bottom basket filter, such as commercial automatic drip machines. It is also an appropriate setting for if you have a refillable coffee capsule for use in Keurig® machines. Medium coffee grinds will be around the same size as sea salt.

    PERCOLATOR

    If you are brewing with a percolator, the grind setting is a bit coarser than your standard medium grind, to minimize grinds making it through the filter. We use a percolator-specific setting on our grinder.

    MEDIUM COARSE

     Vaccuum brewers, Chemex. 

    COARSE

    For french press, cold brew coffee. A coarse grind is very chunky in look, like crushed peppercorns.
